Ground Turkey Fiesta Corn Lettuce Wraps

  • 1 lb ground turkey
  • 3 cups of frozen corn
  • 1 cup of edamame beans (not in pod)
  • 1/4 cup of chopped red onion
  • 1/4 cup of of fresh cilantro
  • 1 small jalapeño chile chopped
  • 2 medium tomatoes diced
  • 2 limes
  • 1teaspoon of fresh garlic
  • 1 head of butter lettuce*

In frying pan crumble and sauté ground turkey until cooked through – about 5-7 minutes. Once cooked, squeeze fresh lime juice and stir. In a large sauce pan over medium heat, add corn and edamame. Top with just enough water to cover and bring to a boil. Boil uncovered for 2-3 minutes. Drain and immediate shock with cold water. Drain again if necessary. In large bowl mix corn, edamame, red onion, cilantro, jalapeño, tomatoes, and ground turkey. Season to taste with salt, pepper, and extra lime juice. Spoon mixture into lettuce and enjoy!

*I prefer to use hydroponic butter lettuce but can also use romaine lettuce
